In partnership with Atlas Restaurant group, H&S Properties bolstered its impressive Harbor East portfolio with the addition of an elevated dining experience at the top of the Four Seasons Baltimore.
With demonstrated demand in the market for unique culinary experiences, a shortage of mid- to high-end cocktails bars / lounges / restaurants in the area, and a truly luxurious view of the city, the Four Seasons Baltimore rooftop space represented an untapped opportunity. In order to capitalize on this opportunity, H&S Properties engaged Streetsense to vision and design a top-of-the-line local food & beverage concept that would stand out within the bustling Harbor East culinary scene.
Drawing from Baltimore’s rich prohibition history, Streetsense tailored a brand story steeped in the bygone era of the 1920s. With an air of drama and subtle grandeur, the concept celebrates the festive, elegant spirit of the historic time and places an emphasis on inspired design details, local culinary tradition, and craft cocktails.
Comprised of several connected epicurean moments, The Bygone offers unique venues in which to discover inventive food & beverage while enjoying unparalleled 360-degree views of the Baltimore skyline and harbor. The Bygone’s design elements are at once warm and welcoming, refined and elegant. Arriving guests are greeted with rich hues, crafted accents, and unique artwork that collectively speak to both the industrial and architectural history of Baltimore. An old-school charm is carried throughout the design of both the restaurant and the bar, with warm woods, vibrant jewel toned fabrics, deep leathers, glass lighting fixtures, plush seating, and more on display. Across the space, diners fill intimate booth settings, observe the activity of the open kitchen in the main dining area, imbibe at a mezzanine-level bar featuring Maryland’s largest whiskey collection, and relish in the stunning harbor views from the private dining room.
The food & beverage experience at The Bygone reflects elevated local flavors and tastes, putting a modern stamp on tradition by offering comfortable high-end food that showcases the wonders of the Chesapeake Bay and Maryland farms. Inspired by local Baltimore cuisine, the culinary offering presents a curated eating experience and demonstrates an inherently deep respect for the product. The fare is simple – almost rustic – but always high quality and prepared with creative cooking methods. A hyper-local and refined beverage program adds depth to the social gathering nature of the space, from the intimate dining environment to the energetic bar lounge. The experience is further enhanced by a knowledgeable and engaging wait staff that together cultivate a high-end atmosphere for guests with personal attention and table-side service.
As Baltimore emerges as a leading culinary force, The Bygone stands to serve as not only a glamorous restaurant where locals feel at home, but also as a regional destination for visitors from far and wide.
